Black Bean Patties

Equipment:

Food processor or blender, heavy bottomed medium skillet, medium mixing bowl and mixing spoon.

Ingredients:

  • ​​2 slices whole grain bread
  • ​​3 tablespoons cilantro
  • ​​​2 cloves of garlic
  • ​​​​1 can of black beans, rinsed & drained
  • ​​​​1 ​chipote pepper
  • ​​​​1–2 tsp adobo sauce
  • ​​​​1​ tsp ​cumin
  • ​​​​1​ egg
  • ​Olive oil for the skillet

Directions:

    ​Process bread slices in a a blender or food processor to make coarse crumbs.  Place in bowl, set aside.

    ​Process garlic and cilantro until finely chopped.  Add beans, chipotle, adobo and cumin.  Process until coarsely chopped and mixture begins to pull away from sides of the container.

    ​Add the bean mixture to the breadcrumbs, add the egg and mix well.  Shape into four 1/2-inch thick patties.  Cook in skillet over medium heat with a small amount of olive oil until browned and cooked through.
